Most people tend to buy blenders in order to just make fruit smoothies. This is surprising, as there are so many wonderful healthy blender recipes you can make, the following is a selection of my favorite blender soup recipes, they are all healthy, easy to make and taste great!
Before we get to the recipes, did you know that you can make hot soup in a Vita mix blender without even touching a stove?
Having said that, if you don’t have a Vitamix to hand… YET!.. I do have some wonderful blender soup recipes that you can try out using just your standard food blender.

Tomato Soup
Hot, tasty tomato soup is nourishing, rich and full of flavor. The best part about tomato soup is that it’s a favorite with almost everyone and it’s so easy to make!
You will need:
- 5 ripe tomatoes, chopped
- 1 onion, chopped
- 1 clove garlic, peeled and chopped
- 1 1/2 cups water
- 1 teaspoon chopped parsley
- Pepper and salt to taste
- Drizzle of olive oil
Method:
Drizzle a little olive oil into the bottom of a large soup pan and add the onion and garlic. Cook for 5 minutes to release the flavors a little, stirring occasionally so they don’t burn. Add the remaining ingredients and cook over a medium heat for 15 minutes, or until the tomatoes are softened. Stir the soup occasionally during the cooking.
Remove the pot from the heat and allow it to cool for a few minutes. Then ladle the mixture into your blender and blend until smooth. Alternatively you can use a stick blender to blend the soup right from the pot. Transfer the blended soup back to the pot and reheat a little, but don’t allow it to boil.
Drop a small dollop of thick cream into the center of the soup bowl if desired. Serve with fresh, crusty bread.
Pumpkin Soup
There are many variations of pumpkin blended soup recipes, but it’s important to experiment with the textures and flavors you like to get it just right.
Here’s a really tasty pumpkin blender soup recipe you’ll love.
You will need:
- 1 tablespoon oil
- 1 small onion, sliced
- 2 cloves fresh garlic, peeled and chopped
- 2 cups chicken stock or broth
- 1 pumpkin, peeled, seeded and chopped
- 1/2 teaspoon cinnamon
- 1/2 tablespoon ground coriander seeds
- 1/4 teaspoon nutmeg
- 1 cup half and half
- 1/2 cup dry white wine
Method:
Preheat your oven to 350F (175C) and place chopped pumpkin on a baking tray with a little drizzle of olive oil. Bake for around 45 minutes, or until soft. This will give your soup a lovely rich, baked flavor.
Allow the cooked pumpkin to cool slightly, then add the pieces to your blender. Puree them until they are smooth and put them aside while you prepare the soup base.
In a large soup pot, drizzle a little olive oil and add the garlic and onions. Cook for 5-10 minutes over a medium heat to release the flavors. The onions should turn slightly clear, but don’t cook them long enough for them to turn brown. When these are done, add the coriander, cinnamon and nutmeg. Cook for 30 seconds, but don’t allow the spices to burn.
Add the wine to the pot and stir well. Remove the pot from the heat and add the pureed pumpkin, half and half, and the broth. Puree the soup with a stick blender, or ladle it into your blender container and blend well. Return the soup to your pot and reheat a little, but don’t allow it to boil.
Always taste your soup before serving. You can add a little salt and pepper to taste or if you prefer a little more spice, add some hot sauce until it suits your tastes.
Serve immediately with a small dollop of fresh cream and fresh, crusty bread.
Broccoli and Cauliflower Soup
This delicious, creamy blender soup recipe is perfect for any occasion and it’s so quick and easy to make.
You will need:
- 1 cup chicken or vegetable stock
- 1 clove garlic, peeled and chopped
- 1/2 small onion, chopped
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 tablespoon chopped fresh parsley
- Salt and pepper to taste
Method:
In a soup pot, drizzle a little olive oil and saute the onions until they turn slightly clear. Add the garlic and cook for a minute, stirring constantly. Add the stock (or broth) and broccoli, cauliflower and parsley.
Cook the soup for 15-20 minutes over a medium heat, or until the vegetables are tender. Remove the pot from the heat and allow it to cool slightly. Transfer the contents of your pot into your blender and puree until it’s smooth. Alternatively, you could use a stick blender to blend your soup right in the pot.
Return the soup to the pot and reheat a little. Don’t allow it to boil. Serve immediately with a dollop of fresh cream and some fresh, crusty bread.
